Ambrosia for diabetics


1/2 c. slivered Almonds
1/2 c Unsweetened Coconut flakes
1 Pineapple
5 Oranges
2 Apples
1 Banana (sliced)
2 Tablespoons Sherry
Fresh Mint (garnish)


Preheat your oven to 325 and spread the almonds onto a baking sheet, bake until golden. Transfer to a plate to cool.
Add the coconut to the sheet and bake until golden. Cool this on a plate.
Cut the pineapple into cubes.
Cut each orange into sections and add to pineapple cubes along with the apples, banana and sherry. Gently mix.
Divide mixture into separate bowls and sprinkle almonds and coconut over the top.

Applesauce Cake

1 large egg, well beaten
3/4 c. unsweetened applesauce
1 3/4 c. wheat flour (sifted)
3/4 c. margarine
1/2 c. Fruit Sweet (or equivalent sweetener)
1 1/2 tsp. baking soda
1 tsp. cinnamon

1/2 c. chopped walnuts – Optional
1/2 c. raisins – Optional
1 cup diced apples – Optional

In small bowl, stir together eggs, margarine, and applesauce
Sift together flour, cinnamon, and baking soda.
If using nuts and/or raisins, add to flour and blend.
Mix the flour mix to the applesauce mix and add in the fruit sweet.
Pour batter into sprayed 8 inch square pan
If using diced apples, sprinkle over top of batter.
Bake for 40 minutes at 350 (or until done)
Let cool and serve.

Can be topped with applesauce, whipping cream, whatever you like.

Also a healthy breakfast accompaniment.

Dutch Apple Pie

Dutch Apple Pie


1/4 cup flour
1/2 cup quick cooking oats
1/2 teaspoon cinnamon
5 cup sliced baking apples
Sweetener equal to 1/2 cup sugar
1/2 cup unsweetened frozen apple juice concentrate
Pie crust for 1 crust pie


1/4 cup flour
1/2 cup quick cooking oats
Sweetener to equal 1/2 cup brown sugar
1 teaspoon cinnamon
1 package sugarfree instant vanilla pudding mix
1/2 cup butter or margarine

Mix flour, oats, cinnamon, and sweetener with a fork.
Pour over sliced apples and mix well.
Pour apple juice over top of apples and mix well again.
Put apple mixture in pie crust; set aside.

For topping:

Mix dry ingredients with fork.
Add butter and cut into dry ingredients with a pastry blender or 2 knives until it resembles coarse crumbs, Pour mixture over pie filling and press down evenly over apples.
Bake at 400 degrees for 45-55 minutes.

Diabetic No Sugar Apple Pie

1 can (6oz/177ml) apple juice from concentrate
2 T Cornstarch
1/2 c Water
1/2 tsp Apple pie spice
4 cored Apples
1 Uncooked double pie crust
Sweetener, if desired


Mix first 4 ingredients. Cook until thick. Slice apples into uncooked pie crust.
Pour mixture over apples. Cover with top pie crust.
Bake @ 350 degrees for 45 minutes. Apples can be sprinkled with couple teaspoons of sweetener, if desired.

Note: This pie can be made without crust to save calories. Pour mixture over apples in pie pan.
